Abstract:
The total lipid and cholesterol content of eggs from common species of domestic birds were investigated.
Eggs from local and guinea fowls, pigeon and turkey showed lower lipid contents in the range of
0.05±0.009 to 0.08±0.003 gig egg. The exotic fowl and geese gave intermediate values of 0.11±0.006 to
0.14±0.00S gig egg; while the ducks had higher values of approximately 0.30 gig egg. The cholesterol
contents of all the birds studied were found to be in the range of 3.29±0.04 to 10.8S±0.28 mglg egg. The
exotic and guinea fowls, geese, turkey and dove have higher values ranging between 8.34±0.12 to
10.85±0.28 mglg egg. Comparatively lower values of between 3.29±0.04 to 6.64±0.02 mglg egg were got
with the local fowl, the ducks and pigeon. It was concluded from these results that the locally raised
fowl, the ducks and pigeon had lower cholesterol content than the rest of the birds studied. Local and
guinea fowls, turkey and pigeon had lower total lipid content.
